Birbone is a red wine with a great character that was created to see if somebody could appreciate a traditional product made with the ancient methods. It is composed by 90% Sangiovese and 10% Merlot. During the wine-making, the soft pressed grapes are cooled at 16°C. This cooling-process is useful to extract from the peels polyphenols and anthocyanins. The alcoholic fermentation follows with its 16 days at a controlled temperature of 27°C. After the drawing off, the clearing process and the malolactic fermentation, the product is introduced in little wooden containers (2.25-5 hl) for 12 months.
Features of Birbone red wine
The organoleptic aspect shows an intense ruby red colour. The scent is complex, with fruity scent that recalls red and black fruits like cherry and blackberry, enriched by sweet spices, tobacco and liquorice. The taste is dry, warm and rich of tannins. This elegant wine has a great personality and a long-lasting persistence.

A perfect wine for important happenings, excellent with grilled or roasted red meats, aged cheese or pan dishes. Its aging lasts also 10 years, if the bottles are conserved horizontally and at 12°C. It has to be served at room temperature in a wide wine glass, in order to allow the correct oxygenation.
