A unique sparkling wine produced by the Villa Sandi winery in the recent DOCG of Asolo certificated area. This area is in the Montelòlo and Asolani hills at the feet of the Dolomites. The soil has intact stratigraphy quite deep consistence. There is always a mite spring climate with strong thermal excursion. The cultivation method is the trellised with minimum 3000 trees per hectare. There is a pressing of the grapes then the must is poured and put in tanks under temperature control. There is an addition of selected yeasts to ferment in thermos-conditionate tanks at 15-16°C. Once reached the alcoholic degree and the sugars it takes place the cooling to stop the fermentation and after a short rest time it is bottled.
Characteristics of this Prosecco Superiore DOCG
It has a light straw yellow color. The perlage is fine and persistent. The smell is intense and fruity with ripe golden apple aromas. It has also acacia aromas and an elegant smell. The taste is structured, fresh with intense fruity aromas. The end is elegant and balanced. The service temperature is 8°C.
