This sensational and refined sparkling wine from Alta Langa Classic Method of Filari di Luna is born from the wise vinification of vines of precious Chardonnay 70% and Pinot Nero 30%. The area of origin of the vineyards is that of Neviglie in the northern area of the Langhe. The grape growing system is the classic Guyot system. The plant reaches a density of strains of about 4'800 plants per hectare of land. The exposure is towards East-and towards North / East. The soil is characterized by the prevalence of clays. The harvest is carried out at the end of August. Vinification and subsequent refinement begin with the grapes that are harvested in boxes and pressed directly with soft pressing. The must is fermented partly in steel and at a lower percentage, about 10% in barriques. In the following spring, the base wine is prepared for the second fermentation in the bottle with the addition of selected yeasts and sugar for foaming. The bottles are then placed in a cool place where the refermentation and foaming will take place; then they are left to rest on the lees for at least 4 years, then they are transferred to the pupitres where they will be turned according to the traditional process for about 30/40 days in order to obtain the clarification of the sparkling wine and the separation of the natural sediment on the bottle cap. Will then be disgorged with the method of "degorgement" and recaptured.

Excellent with fish-based dishes, but also with meat, both white and red. The optimal serving temperature is 8°C in tall and tapered glass.
