From the vineyards of Sava and Manduria comes this red wine Riserva Primitivo di Manduria Zolla. After manual harvesting of the bunches, this is followed by destemming and soft pressing of the partially overripe harvested grapes. Maceration takes place at a controlled temperature of 24-25°C for approximately 14 days, followed by racking and malolactic fermentation in steel. The final aging stage takes place in French and American oak barrels for 12 months and then in concrete for another 12 months.
Characteristics of this Primitive Reserve
It has a ruby red color with purple highlights. The olfactory bouquet is complex and recalls olfactory notes of cherry, blackberry and currant as well as spices, vanilla and coffee. On the palate it strikes with velvety tannins and long persistence.
Recommended pairings with this red wine
Excellent with lamb, game and aged cheese dishes. Serve at a temperature of 16-18°C.
