Terlano Cellar is located in Trentino Alto Adige and produce this sensational white wine. It is a blend, composed by 60% Pinot Blanc, 30% Chardonnay and 10% Sauvignon Blanc. The vineyards are cultivated on lands with an elevation that swings between 250 and 900 meters above the sea level. The average incline is between 5 and 70% and the exposition is south, south-west. The manual harvest is followed by delicate soft pressing and by the elimination of lees through natural sedimentation. The fermentation is slow and it is managed at controlled temperature in big wooden barrels (30 hl). The malolactic fermentation is only for Pinot Blanc and Chardonnay. 12 months aging in big barrels. The wines are assembled 3 months before the bottling.
Feature of this white wine produced by Terlano
Light yellow colour full of green reflections. Its perfume discloses the aromatic structure of this blend, that is wide and full of particular aspects. It recalls herbs, spices, anise, mint, sage, fruits like apricot, mandarin, melon and maracuja. The taste of “Nova Domus” is complex, structured, creamy, soft, aromatic, mineral and persistent.
Recommended food pairings while tasting this great white wine
Excellent with caviar, grilled salmon, roasted tuna, steaks, meat, “parmigiana di melanzane” or truffle fondue. It should be served at 12°C.
