The grapes used for this Spumante Metodo Classico are pure Ribolla Gialla, cultivated on clay soil; once hand-picked during the harvest, the bunches are pressed and exposed to the air, so that hyper-oxygenation leads to stabilisation of the product, preparing it for the long ageing phase in the bottle. once alcoholic fermentation is complete, the wine rests on the lees in steel. The mass thus obtained is then filtered to prevent malolactic fermentation, and barrique-aged white wine is added before the second fermentation. This is followed by resting on the lees for at least 24 months, degorgement and further resting for a further 6 months.
Characteristics of this Metodo Classico
Organoleptic examination reveals a straw-yellow colour with greenish highlights and a creamy perlage. The bouquet is fine and elegant and evokes white flowers and white-fleshed fruit. The palate is dry with a slight acidic streak.
