Vinification in a blend of Chardonnay and Pinot Noir. The origin is the classic one of the DOCG area in which the Le Marchesine di Biatta Giovanni & C Winery operates in the combine of Passirano, in the province of Brescia. The harvest takes place with the selection in the vineyard of the best grapes that are harvested manually in boxes of maximum 18 kg. The vinification develops in white in pneumatic press with soft pressing of the whole grapes and separation of the 1st and 2nd fraction. The must of the Pinot Noir makes a slight maceration of about 6 hours, and then is blended with the Chardonnay. After static and physical separation from the impurities of the must at low temperatures, the yeast is inoculated for fermentation in stainless steel tanks at controlled temperature. This is followed by decanting and lowering of the temperature to about 10ºC to avoid malolactic fermentation. Once the "tirage syrup" has been added, it is bottled, capped with the crown cap and laid down in a pile for foaming. It is then aged in bottle for at least 36 months.

The appearance of the wine has an antique pink color, fine perlage and great persistence. The nose expresses a beautiful olfactory profile, intense and multifaceted, played on notes of flowers, wild rose, and small red berries, raspberry. The taste in the mouth is dry, complex, satisfying and of great balance. The finish is very clean and expressive.
