Produced with pure Pinot Noir grapes grown in the company's vineyards of Passirana, in the heart of Franciacorta, this Extra brut Millesimato from Le Marchesine Winery is one of the latest creations of the Biatta family. The grapes are harvested in the vineyard during the manual harvest, in 18 kg boxes. The vinification takes place in white in a pneumatic press by soft pressing of the grapes; after cleaning the must, which is therefore deprived of its impurities, selected yeasts are used to ensure fermentation which takes place in stainless steel tanks at a controlled temperature. After the addition of the draft syrup bottling takes place: after putting the crown cap on, the bottle is laid down for the second fermentation.
Characteristics of this Franciacorta Extra Brut
At the organoleptic examination this wine shows a coppery color and a pronounced perlage. The olfactory notes have clear references to spices, roots and licorice. Sweet and fresh notes alternate on the palate with a balsamic finish.
Suggested food pairings while tasting this Franciacorta
Excellent both as an aperitif and in combination with fish-based main courses with strong flavors, but also grilled fish. Serve at a temperature of 8-9°C in a large glass.
