This Zibibbo "Oxydia" from the Sicilian Florio winery is made with 100% Zibibbo grapes, carefully selected. Immediately after the manual harvest which takes place at the end of September, the grapes already in the overripe phase are further left to dry; we then move on to soft pressing and controlled fermentation as to reach an alcohol content of 5-6 ° C. Wine distillate is added to block the fermentation process and above all to preserve part of the sugars. The maturation lasts until the spring season and the refinement takes place in the bottle for a period of at least two months.
Characteristics of this Sicilian wine
To the organoleptic examination it appears as a wine with a luminous gold color; the nose is intense with notes of dried figs and apricot; on the palate it is a soft and full wine.
Suggested food pairings while tasting this Sicilian wine
Excellent with blue cheeses, dry pastries, fruit and ice cream. To be served at a temperature of 14-16°C in a tulip glass.
