This Blanc de Blanc extra brut sparkling wine from Cantina Perusini is made from 100% Chardonnay. After manual harvesting, soft pressing follows by extraction of the must only flower: follows a phase of rest at low temperature, during which the so-called "cold housing" or the continuous mixing of the pulp in the must. As for fermentation, 7% of the mass ferments in wood that will then be combined with that which ferments in steel. After resting, the masses are separated from the lees and prepared for foaming: this is the phase in which the addition of yeast for the second fermentation takes place. The product then rests 36 months on the lees and the bottles are rotated and tilted for disgorgement. In the final phase of disgorgement is added a small amount of Picolit, to enrich the product of aromatic richness.
Characteristics of this Spumante Perusini
Straw yellow color and fine and persistent perlage. The olfactory profile evokes bread crust and mineral notes. The palate is creamy, with hints of white fruit.
