The classic line of the Terlano Winery offers a great product made with the local and characteristic Pinot Nero wine. The Pinot Noir DOC Classico is honored by the DOC Alto Adige certification. In the medium altitude vineyards on the Terlano hamlet and especially on the Monticolo plateau, the exposition at South and the windy nights create the ideal condition for the growth of the Pinot nero grapes which are very elegant and from which are produced very captivating wines with mixed berries aromas, intense scents and very chromatic color nuances. After the manual picking of the grapes, there is the racking off of the berries and the following slow fermentation under temperature control with several handling cycles of the must in stainless steel tanks. The malolactic fermentation and the aging lasts 7-10 months and it takes place in big wood barrels. The production area is located at north of Terlano where the soils are located at 500 meters above the sea level with slopes of 35% with a South, South-west exposition.
Characteristics of the Pinot Nero Doc wine
It has a very bright red color tending to a ruby red one. The perfume is fresh and captivating with blackberry and black raspberry aromas joined by licorice cherry spirit nuances and a light undergrowth hint. The taste has a very good balance between fruity fullness and a lightly tannic structure which give to the wine mineral hints and a great elegance.
Suggested pairings with this red wine from the Terlano Winery
It is perfect with roasted goat with celery and carrots purée, with a breaded cutlet of lamb served on herbs risotto, but also with sea, lake and river food such as the trout cooked with the miller’s style with boiled vegetables and the missoltini with cornmeal mush. It has to be served in a Borgogna wine glass which helps the oxygenation and the spreading of the scent. It has to be served at 14°-16°C.
