From the vinification in purity of 100% fine Pinot Noir grapes. The origin is the classic one of Alto Adige Val Venosta. The harvest takes place strictly by hand and is carried out in mid-September. Vinification follows with the grapes which remain in large oak fermentation tanks for 3-4 weeks during which the grapes are continuously stirred by hand. Finally the wine is transferred to French barriques of 228-500 liters where it remains for 12 months. Once bottled, it is stored for another year in the company, where it has the opportunity to mature.
