From the vinification of Moscato Bianco grapes. The origin is the classic one of Piedmont, from vineyards in the heart of the area historically most suited to this vine. Harvest by hand. The vinification involves the soft pressing of the whole grapes. The must is stored in the tank at -2 ° C to maintain the integrity of the aromas; a slow fermentation in autoclave at a controlled temperature follows until reaching 5 degrees of alcohol. During this process, part of the carbon dioxide developed during fermentation remains "trapped" in the wine, giving it its natural slight effervescence. Before bottling, the wine is then subjected to micro-filtration to give it transparency, purity and avoid any further fermentation of the yeasts.
