100% Petit Manseng, a local variety that belongs to Caldaro, in Trentino Alto Adige. The vineyards are located in Mazzon di Caldaro, 400 meters above the sea level. The hills, kissed by the sun, have a south exposition, that allows a good ventilation. This combination is perfect for a natural late harvest. The soil is characterized by minerals of different dimensions. The wine making starts with the soft pressing process, that lasts 8 hours. The spontaneous fermentation is managed in wooden barrels. It is a slow process, that develops, once ended, 11% alcohol. This generates a perfect balance between alcohol, sugar residual and sourness.
Features of the "Le Petit Manincor" wine
The organoleptic analysis shows a straw yellow colour with gold shades. Its perfume recalls mango, litchi, dried apricots, enriched by complex sensations of honey and mould. The taste is sweet and sour at the same time.
