The Cavicchioli winery produces this sensational red wine from local tradition, the Lambrusco Grasparossa Malbo Gentile. The origin of the grapes falls in the IGR area of Emilia-Romagna. For the vinification, the grape of Lambrusco Grasparossa di Castelvetro, the last to ripen among the Modena Lambruscos, is harvested in the second half of October: after the alcoholic fermentation with indigenous yeasts, the spontaneous refermentation takes place for 4-5 weeks.
