From the vinification in purity of precious and selected 100% pure Carricante grapes. The origin is that of the territory included within the company limits, in the Castiglione di Sicilia estate. Harvest takes place during the last week of September then vinification follows, with cold maceration for about 24 hours and subsequent static decantation. Fermentation takes place in steel at a controlled temperature of 16 ° C for about 20-25 days. The refinement, on the other hand, takes place for at least 6 months, during which the wine ages in steel on the lees for about 6 further months for a total of 12 months.
Etna Bianco DOC Cottanera
A straw yellow color. Citrus notes of lemon and cedar with orange blossom and jasmine. Taste is full-bodied but well supported by the acidity which gives the tasting a rare freshness with a long finish.
