The white wine Bramìto del Cervo di Castello della Sala is entirely produced with 100% of Chardonnay grapes. It is honored by the IGT certification. The character of this spectacular wine is enriched by the alcoholic fermentation in barrels and the aging period part in wooden barrels part in steel which confers to this wine a charged straw yellow color and a good roundness in the taste. For the vinification the grapes are picked during the night and cooled in particular steel tanks which keep the temperature at 10°C not to alter the characteristics of the grape. After some hours on the peels the run juice is put in French oak barrels where it takes place the alcoholic fermentation and in part the malolactic one. Part of the wine is put in wooden barrels for 5 months while the other part is put in stainless steel tanks where it occurs the alcoholic fermentation in contact with the lees. Finally it takes place the blending so the bottling.

The Bramìto del Cervo has a bright straw yellow color with green reflections. The smell has a complex and fresh bouquet with butter and vanilla hints. The taste has a good structure, elegance and mineral aromas with a fresh acidity and a good balance all melted with the delicate wood fragrances.

The Bramìto del Cervo di Castello della Sala is a meal wine but it is perfect with structured sea meal. The fish soups or the sea grilled food and other Mediterranean sea cooking are very good matches too. It has to be served at 14°C in high and tapered wine glasses to help the oxygenation and to allow the smelly fragrances to delight the taster.
