The cultivation is located in the Tolentino area which is an old Middle-Age city surrounded by wall and full of military districts which are a characteristic of the urban contest. The cultivation ground has alluvial geological characteristics rich of calcareous with a medium deep structure. The vineyard is at 130 meters above the sea level and the vines are cultivated with the French Guyot method. The harvest is in the second week of September and the fermentation takes place in vitrified cementer tanks which don’t leave any scents to the wine and there is a short maceration under temperature control stable at 8°C. This happens after a soft pressure which permits the separation of the must from the flower.
