A Franciacorta Sparkling wine that boasts the denomination Franciacorta Rosé DOCG. The vinification involves the use of the Pinot Nero grape for 80%, to which is added a small percentage of 20% Chardonnay. The provenance of the 3 Chardonnay vineyards, from the average age of 29, falls within the administrative territory of Erbusco, Cazzago San Martino, Iseo and Passirano. Then the 17 Pinot Nero vineyards, with an average age of 22 years, are located in the municipalities of Erbusco, Adro and Passirano. The careful vinification of the Cuvée Prestige Rosé comes from the separate vinification of Pinot Noir and Chardonnay grapes. The Pinot Noir grapes, once transported over the vat, are separated from the stalks and the berries fall inside them, from above, by gravity. The "pink" maceration is carried out for 24-36 hours: only a few hours to "seize the moment", that is, to obtain that particular and delicate shade of pink that distinguishes Franciacorta Rosé in the bottle. Subsequently, the must separated from the skins ferments in small barrels and steel vats at a controlled temperature. Chardonnay grapes are vinified in the traditional way, with pressing of the whole bunches. The best fractions of must ferment in vats, separately. After 8 months of refinement, the “magic rite” of creating the cuvée begins, blending the base wines of Pinot Noir and Chardonnay. The Cuvée thus obtained is bottled and aged on the lees in underground cellars, at a constant temperature of 12°C, for an average period of 30 months. The dégorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Cà del Bosco. This avoids oxidative shocks and further additions of sulphites, making our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked, to guarantee its traceability.
Franciacorta Cuvée Prestige Rosé's features
On the organoleptic examination this Franciacorta wine shows a salmon pink appearance with a fine and persistent perlage. The scent is surprisingly rich on the nose, with a depth on the floral of rose and peony, and on the fruity of pomegranate and strawberry. The taste is confirmed fruity, and is fresh with a subtle and delicate effervescence.

A perfect wine with aperitif, along with fish-based preparations or with eggs and quiches. To be paired with a warm seafood salad. The optimal serving temperature is 6°C in a tall and tapered glass.
