A complex story that goes back 25 years. A generation that has based its experiences on the local tradition and on the knowledge inherited from the grandparents of the family, pillars for the current reality. The adventure of Celestino Gaspari begins at a very young age in Val d'Illasi in the family lands working alongside his parents and earning studies in the agricultural sector. The decisive meeting, however, comes to 20 years when he knows his future father-in-law, Giuseppe Quintarelli, together with whom for 11 years he works in the company of the same name, and then goes on to be himself an element of birth and growth for a dozen companies in the area. This brings us to the current reality where the experience gained in the wine scene - wine offers the Zýmé winery in fact, opening the way to collaboration with qualified, professional and above all passionate people, who make up the fabric, the structure and determination over the years. The name comes from the ancient Greek. It means "yeast", a fundamental term in the world of enology. The logo describes a pentagon traced inside the pentalobate vine leaf, symbol of the five main elements for the production of wine: Man, Vine, Earth, Sun, Water. There are two wineries at Zymé. The first one is more characteristic and is made in an ancient sandstone quarry of the fifteenth century located in the heart of Valpolicella Classica. Suggestive, underground and ideal to guarantee the right synergy to the elements that distinguish the wine of the company. The symbiosis between wine and mother rock that makes up the quarry generates a perfect balance of energy. The second, more modern, structure prefers to the characterization the logistic aspect, dictated from the current market.Inside it is possible to manage the whole wine production process of the Zymé winery. In the winery, however, simple technologies are used to respect the integrity of grapes, musts and therefore wines themselves.
