From the vinification of grapes from the autochthonous Sangiovese grape variety, 100% pure. The origin of the vineyards falls within the business areas in Tuscany. For the vinification are selected by hand the best bunches that are transported in the drying, where they are hung one by one on special mats and where they will remain until the first half of December. Once the necessary degree of drying is reached, the grapes are pressed to obtain a precious must that is decanted and then decanted into oak and chestnut caratelli. The wine goes through a long natural fermentation and is ready not before 5 years of aging in wood, when it is carefully racked, decanted and bottled without filtration so as not to lose anything of the richness of this natural product.
Characteristics of this Vin Santo
On organoleptic examination the wine has an intense amber color with copper reflections. The scent is that of apricots and prunes surrounded by nuances of walnut husk, hazelnut and chocolate. The taste is sweet, rich and well balanced, still refers to dried fruit with hints of spices, wild herbs and a finish of ripe citrus.
Suggested food pairings while tasting this
A good wine also as a meditation wine accompanied by a good cigar. The optimal serving temperature is 12 ºC.
