Produced with Primitivo grapes in purezzo, this sparkling brut comes from white vinification. After pressing, the must undergoes fermentation at a controlled temperature of 13-15 ºC.The transformation of the must into wine continues until the end of October, always in steel and on the fine lees. Afterwards, the wine is transferred to the tank for the second fermentation where the fermentation takes place and finally the aging on the lees for about 120 days.
Characteristics of this rosé sparkling wine
It has a bright pink color and very intense and a fine and elegant perlage. The nose is striking for hints of small red fruits and floral notes, as well as yeast and bread crust. The palate is good effervescence, soft and balanced.
Recommended pairings with this Apulian wine
Excellent as an aperitif, to try with pizza, raw fish and in general with all dishes and fish. Serve at 4-6 ºC.
