Made from Zibibbo grapes grown as saplings and dried on the «cannizzi» in the warm August sun, an elegant Passito with scents of apricot, candied and dried fruit. The vine used for its vinification is that of Zibibbo cultivated with Pantesco sapling, Unesco heritage. The origin is the DOC of the Island of Pantelleria where the Denomination of Controlled Origin is guaranteed. The vinification foresees that the harvest time falls in the first and second decade of September. Soft pressing of the grapes, start of fermentation and addition of dried grapes. Aging in steel tanks at controlled temperature for 10 months.
Characteristics of Passito Naturale di Pantelleria
The appearance of the wine has a golden yellow color tending to amber. The scent is immediately sweet with evident notes of apricot, candied fruit and dried fig. The taste is honeyed, with pleasant notes of dried apricot, dried fig and cooked pear.
Recommended pairings tasting this Sicilian passito
Excellent with Sicilian desserts based on ricotta and custard creams; soft hearts with dark chocolate. The optimal serving temperature is 12ºC in a small glass.
