This is an IGP red wine. It is made by Negroamaro grapes. The density is 4500 trees per hectare and the cultivation soils are red, calcareous, with rare stones. There is lots of iron in the soils. The weather is warm with few rains and elevated thermal excursion. The cultivation soils are located in Monte La Conca hamlet between the territories of San Marzano and Francavilla Fontana. There is a manual grape harvest and there is a separate maceration: for a part lasts 18 days and for the other part for 25 days with selected yeasts. The fermentation takes place at 24°-26°C and it follows the refinement for 12 months in French and Caucasian oak barrels. This wine can be aged up to 7 years.
Charateristics of the Negroamaro Salento “F” wine
It has a charged and deep garnet color. The smell is rich and complex with spicy, berries and cherry jam aromas. The taste has a great body, soft and harmonic, rich of tannins with a pleasant persistence.
Suggested pairings with this Negroamaro San Marzano
It is perfect with structyred courses, red meats, game and aged pecorino cheese. It is also a meditation wine. It has a proof of 14,5% and it must be served at 18°C in a wide wine glass.
