The Solaia of Antinori it is one of the most prestigious wines of the Marchesi Antinori house. The blend used for winemaking is prestigious and refined. All selected grapes Cabernet Sauvignon at 75%, Sangiovese grapes at 20% and grapes of Cabernet Franc to 5%. The climatic conditions that characterize the production area have always required important and careful selection work, both during the growing season and during the harvest; the grapes in Solaia are harvested exclusively by hand and separately by variety. Upon arrival at the cellar, the grapes are delicately destemmed and the grapes, before being pressed, are carefully selected at the sorting table. Here the attention to detail is maximum, it is essential that only the perfect grapes enter the 60 hl truncated cone winemaking tank. During fermentation and maceration the musts are slowly transformed into wine; in some years, those characterized by extensive rainfall, extreme care is necessary to maintain freshness and aromas, without neglecting the extraction of color and the management of tannin aimed at sweetness and elegance. All this attention requires great sensitivity, knowledge of the grapes and constant care of the product, which is drawn off only after careful, daily tastings. Once the skins and wine have been separated, the malolactic fermentation begins which, in barriques, enhances the finesse and pleasantness of the wine. The aging process then begins, which lasts at least 18 months, in new French oak barrels. During this period the different lots, vinified separately based on the variety and viticultural variables, are elevated in wood, to then be assembled a few months before bottling, which takes place on the farm.
Characteristics of Solaia wine
The Solaia by Casa Antinori has an intense ruby red color with violet reflections, the varietal notes dominate on the nose with excellent freshness and a fine intensity. Solaia has a classic style and is characterized in the mouth by a pleasant gustatory harmony, composed of a correct acid-tannic balance and excellent enjoyment of the fruit for the entire duration of the tasting. The great personality and the long presence of aftertaste make the finish absolutely complex and persistent.
