The rosé wine Scalabrone Bolgheri DOC of the Guado al Tasso winery is honored by the DOC certification. It is one of the fewest rosé wines with that certification. It is produced with a blend of 40% of Cabernet Sauvignon, 30% of Merlot and 30% of Syrah. The Bolgheri locality is located in Tuscany and it is very famous for its important red wines but it is also renowned for the intense rosé wines. The rosé Scalabrone has an intense color with a fruity bouquet. Each variety has a divided moment of fermentation. The grapes once in the cellar, are destemmed and softly pressed. The juice macerates on its peel in special tanks at low temperatures for 3-5 hours depending on the variety with the aim to achieve the right must. The must obtained is put in stainless steel tanks where it takes place the alcoholic fermentation at 16°C. Each lot is carefully selected to compose the final blend for the bottling.

The Scalabrone Bolgheri DOC it has a bright and light peony pink color. The smell is intense and rich, with floral hints and a fruity aroma that reminds the cherry and the raspberry. The taste is fresh and balanced with a persistent and fruity aftertaste.
Suggested pairings with this Rosé wine
The Scalabrone is perfect with structured fish courses and with fish soups. The spaghetti with sea food and the braised white meats are also perfect matches. It has to be served at 14°C in a high and tapered wine glass.
