The renowned denomination is that of Falanghina del Sannio DOC produced with 100% pure Falanghina grapes. The alcoholic fermentation in steel tanks develops at a controlled temperature of 16°-18°C. Then the maturation of about 5-6 months in steel with permanence on its yeasts and repeated bâtonnage to put in suspension the fine lees.
