This vine represents the whole tradition of Campania Benevento and peasant custom. The local autochthonous vine and rigorously bred within the company limits, is that of 100% pure Coda di Volpe. The origin is the classic one of the Sannio Beneventano in Campania. The harvest takes place in the second half of September. The vinification involves the use of the process with cryo - maceration at 8 ° C in reduction with subsequent soft pressing and fermentation in stainless steel, for 20 days at a controlled and constant temperature of 15 ° C. Aging develops in bottle.

A straw yellow color with green reflections that emphasize its youth. Full and floral scent of notable intensity. Taste has rich sensations of freshness which gradually increase giving a balanced and pleasant taste.

A perfect wine with first courses with delicate fish sauces and seafood risottos but also with pasta with vegetables typical of the peasant tradition, such as pasta and peas, green beans, courgettes, chickpeas, lentils. Perfect with second courses too: white meats, shellfish, stewed fish. Excellent in combination with octopus and shrimp soups. Also try it with sushi and tapas.
