This wine is the one of the last produced and it is also one of the most prestigious. This wine is produced by 100% Petit Verdot grapes and this is a particular aspect because this vine is not so easy to cultivate. The red Campo alla Sughera wine before being commercialized must be aged for 4 years: 2 in barrels and 2 in bottle. The Petit Verdot vine of the Campo alla Sughera are cultivated in the core of the DOC “Bolgheri” area. The grapes used are the Petit Verdot with a little percentage of Cabernet Franc to round the taste. The bunches are manually picked and put in 15 kg wooden boxes. There is a destemming and pressing of the grapes and it follows a cold pre-fermentation at 7-8° C, for 1-2 days. Then the temperature gets high and it takes place the alcoholic fermentation. After 15 days it takes place the racking and late the first pouring in barrels where it occurs the malolactic fermentation. Finally it takes place the last aging period in oak barrels for 24 months and further 24 months in bottle.

It has a very intense and compact ruby red color. The smell has personality and refinement with currant, cinnamon, dry flowers and tobacco aromas all perfectly mixed together. The taste is sensational, very full and enveloping with silky tannins.

It is perfect with strong courses such as the game especially if prepared with a previous long maceration in wine such as the deer salmì. It is also perfect with Pecorino di Fossa or 36 months old Parmigiano Reggiano. It is also special alone.
