This wine is the result of long studies on the fermentation of the grapes of Montalcino, done between the 60s and the 70s by Giovanni Colombini. Eclectic and never excessive, this product is really perfect to be shared with friends in everyday life. 100% Sangiovese. During the wine-making, the soft pressed grapes are cooled at 16°C. This cooling-process is useful to extract from the peels polyphenols and anthocyanins. The alcoholic fermentation follows with its 10/12 days at a controlled temperature of 27°C. The wine stays then in steel containers till the bottling.
