This wine has the most famous denomination of Italy: Brunello di Montalcino DOCG. It is produced with 100% Sangiovese, cultivated in vineyards located at 200,300, 450 meters above the sea level. The poor soils have different expositions. The production zone is the one around Castelnuovo dell’ Abate, in the valley of the river Orcia. The vines are trained typically with cordon spur method. The manual harvest is planned in the middle of September. The grapes are placed in 15-20kg boxes. The plants produce around 30 quintals per hectare. Multiple selections are planned. The wine making is managed in wood containers, with spontaneous fermentations and long macerations. 48 months aging in 30hl oak barrels and a further maturation period in the bottles. No filtration before the bottling process
