The Barolo del Comune di Serralunga d'Alba DOCG Serralunga from Enrico Serafino winery is produced with 100% Nebbiolo grapes harvested by hand in the vineyards of Serralunga d'Alba. After the manual harvest, the bunches are carefully selected and cooled with carbonic snow to prevent oxidation; after the destemming takes place the soft pressing without the use of augers, to preserve the peculiarities of the bunch. The must thus obtained is cooled before fermentation, which takes place in steel tanks at controlled temperature. It follows the maceration with the practice of délestage and the submerged hat for over 28 days. It is then aged in tonneaux for 12 months and for another 16 months in oak barrels.

The organoleptic analysis of this Piedmontese wine shows an intense ruby red color with garnet reflections. The nose has hints of licorice, spices, tobacco. The palate is rich in fine tannins with a pleasant long finish. Nebbiolo grape is easily recognizable.
