From the vinification of 100% Nebbiolo grapes. The grapes, freshly harvested, arrive in the cellar intact and is quickly crushed and gently destemmed to extract from the skin and from the outer area of the berry only the most noble and aromatic fractions. The fermentation, at controlled temperature, takes place in thermo conditioned tanks. Maceration lasts 10 days, during which periodic pumping over is carried out in order to allow the must to appropriate all the trace elements present in the skins and to gently extract the coloring material. Racking only happens when all the sugar has turned into alcohol. Racked in vitrified concrete vats, specially made with a cork insulation, the wine maintains a long post-fermentation temperature of about 22 ºC. In this way malolactic fermentation starts and ends spontaneously in the following two months. The aging of the wine foresees that part of it is aged for about two years in Slavonian oak barrels of 30 and 35 hectoliters. The remaining part is aged in small 225-litre French oak barrels, medium toasted. The vineyard finds its unity with the assembly in traditional large oak barrels and completes its aging in the bottle before being put on the market. Barolo Cannubi reaches maturity after 6 years from harvest and the ripening plateau is between 6 and 25 years.
Characteristics of Barolo DOCG
The appearance has a ruby red color with garnet reflections. The aroma is intense with a clear scent of rose, vanilla, spices and toasted oak. Nuanced note of wormwood. The taste is full and elegant, with a good body, austere, with soft and enveloping tannins. Pleasant are the spicy and woody note that blend perfectly.
Recommended pairings while tasting this Piedmont red wine
A wine that goes well with traditional langarole egg pasta, tajarin, meat ravioli, red meat dishes, boiled, braised and game. It is the ideal companion for mature sheep and goat tomes and hard cheeses. The optimal serving temperature is 16 ºC.
