BIBI GRAETZ

The Bibi Graetz winery was born as one of the most unique and recognizable projects in the Tuscan wine scene, especially because it strongly unites the world of wine with that of art and creativity. Its founder, Bibi Graetz, in fact comes from a family of artists and trained at the Academy of Fine Arts in Florence before dedicating himself completely to wine at the end of the ’90s. In 2000, he decided to start working with the old family vineyards on the hills of Fiesole, creating his first production and the wines that today represent the company's identity, such as Testamatta and Colore. One of the most characteristic aspects of the winery is precisely the centrality of the old native Tuscan vineyards, often very old and located in different areas of the region, from the Florentine hills to more extreme territories such as Rufina, Chianti and even the Isola del Giglio. This continuous search for historic vineyards allows us to obtain more concentrated grapes rich in identity, considered the true heritage on which the company style is based. From a production point of view, Bibi Graetz stands out for a very uninterventionist approach in the cellar. Fermentations are often spontaneous, using indigenous yeasts, and vinifications are carried out by separating the different plots, as if they were “colours” different to be assembled only later. The use of wood is also calibrated: large barrels or barriques are used to accompany the wine without covering its varietal expressiveness. Another distinctive feature is the strong connection with aesthetics and image: wine labels are often paintings created by Bibi Graetz himself, making each bottle an artistic as well as oenological object. This fusion of art and wine is one of the winery's most recognizable stylistic features and helps make it unique in the Tuscan panorama.
