The Pollenza estate vineyards for the production of the Porpora wine are the “Merlot” and the “Montepulciano” wonderfully blended during the wine making process and used respectively for a 85% and a 15%. Since 2003 this wine is honored by the IGT certification internationally renowned. The geographical area of this wine is the Marche in the Tolentino town in the Pollenza estate. The ground where the vines are cultivated is alluvial so rich of calcareous with a medium deep structure. This land is about 150 meters above the sea level and the cultivation method is the cordon spur one. The harvest, as tradition, is divided into two steps according to the maturation periods of the two vines used. The Merlot is picked the first week of September whereas the Montepulciano has to be picked the third week of September. The fermentation takes place in vitrified cementer tanks under temperature control and stable at 28°C and follows the maceration of the peels for at least 10 days. The wine maturation takes place in different kind of barrels such as, for example the Slovenia oak one. The refinement lasts 12 months and it can be aged until 8 years.

The scent of the Porpora of the Pollenza cellar is intense with some ripe fruit aromas such as cherries and jam. They are marked the fine spicy flavors, the tobacco and licorice which are mixed together.
