This bottle is a 1.5 liter Magnum format and is sold in a wooden case.
It is our most important red, which has been produced for over a century. In the cellar of the Barbel Farm you can see a collection of thousands of our bottles of Brunello , starting with the 1892 harvest. It ferments an average of 14 days in steel tanks without ever exceeding 28°C, it is then aged for at least two years in Slavonian barrels and four months in the bottle. The vinification involves the use of 100% pure Sangiovese. The vinification requires that the pressed - destemmed grapes undergo a sudden drop in temperature up to 16°C, in a CO² protected environment. This cooling process of the grape skin allows for a greater extraction of the anthocyanin and polyphenol content. This is followed by normal alcoholic fermentation which extends for at least 16/17 days at a controlled temperature of 27° C. After racking off, malolactic fermentation followed and the wine was subsequently placed in medium-small casks, ranging between 2.25 hectoliters and the 15 hectoliters followed by the passage into higher capacity barrels. The vintage Brunello is aged in barrels for at least two years and aged in the bottle for a minimum of 4 months.
