Cabochon is the most prestigious wine produced by Monte Rossa. It has been the result of a research, started in 1985, that considered the careful selection of the Crus, joined to a new wine-making technique that introduced the barriques for the first fermentation of the juice. 70% Chardonnay and 30% Pinot Noir, cultivated in Bornato, Brescia. After a careful selection, the grapes are harvested manually and placed in wooden boxes. Soft pressing and selection of the best parts of the grapes. Each Cru is vinified separately. The fermentation is managed barriques. The aging lasts for 36 months.

Shiny and intense straw yellow colour with a faint and persistent perlage. Its perfume recalls fresh almond and loquat. Its final is vegetal, as always for the wines of the best vintages. The taste is rich, dense and has a great personality
