Ognissole
Ognissole was born from the dream of enhancing, in a unique business project in the region, the main native vines of Puglia. The Company is structured in two independent estates, each with its own vineyards and a dedicated vinification structure. In the Tenuta di Manduria the potentialities of Primitivo and Negroamaro are fully expressed. While in the area of Castel del Monte the Tenuta Cefalicchio, biodynamic (with Demeter certification since 1992), focuses mainly on Nero di Troia and Moscato. The estate of Manduria, with about 50 hectares of vineyards, is located in Fragagnano (TA)in the heart of the production area of Primitivo di Manduria DOC. The production cycle is entirely made in a small winery in Sava (TA), about 3 km from the vineyards. The vineyards are cultivated both with espaliers and saplings for the oldest vineyards of Primitivo. They are located in an area formerly covered by the waters of the Ionian Sea. The soils, calcareous and sometimes clayey, have the characteristic "red" color, typical of these areas. The cultivated varieties are: Primitivo, Chardonnay, Negroamaro. The estate of Cefalicchio is a biodynamic farm located in Canosa di Puglia in a hilly area surrounded by pine trees, olive trees and vineyards. The conversion to the biodynamic method, one of the first companies in central and southern Italy, began in 1992. The original core of the estate consists of a historic villa of the sixteenth century, completed over time by external appliances. The Tenuta Cefalicchio, with about 27 hectares of vineyards, is located in the Murgia area of the DOC of Castel del Monte. Nero di Troia, Bombino Bianco and Moscato Bianco are the main autochthonous varieties.
