The Brunello di Montalcino produced by the Biondi Santi winery , it is the fruit of an exceptional harvest characterized by a regular seasonal course. The main evolutionary stages benefited from a wet spring and a long, hot summer with interspersed rains. The harvest took place starting from 10 September with a cold course and rain at the end of the harvest. The healthy, ripe grapes, with thick and colorful skins, were able to produce a must rich in sugars, with extracts and acidity with a pH of 3.4. Finally, the vinification took place in the traditional way, with controlled temperature, and the racking after 15 days. The production area of Brunello di Montalcino is the one regulated by the DOCG disciplinary, the highest honor. It falls entirely within the municipality of Montalcino. The vineyards used are between 10 and 25 years old and are completely included in the business. The composition of the land on which they are raised is particular and includes various origins, all characterized by the richness of the skeleton. The best are the galestrose ones. The exposure is multiple and affects the slopes: South, South-East, East, North-East, North, at an altitude between 300 and 500 metres. The vinification involves the use of 100% pure Sangiovese grosso grapes. The grapes are then vinified in red at a controlled temperature, the maturation lasts at least 3 years and takes place in Slovenian oak barrels. The refinement takes place in the bottle and lasts at least 4 months.
