The denomination DOC certifies the controlled origin of this wine. It is produced in Piedmont, with 100% Dolcetto grapes that come from the hills of “Langhe”, with a medium density of 4500 vines per hectare cultivated with Guyot training method. The production is around 50 hl. The soil of these lands is characterized by limestone and clay. The fermentation of this wine is managed in steel containers, with different “délestages” that guarantee the right extraction of the colour and a lot of daily operations of mixing, in order to maintain the peels in contact with the must. The malolactic fermentation and the aging are developed in steel too, in order to preserve freshness and perfumes. “Dolcetto d’ Alba DOC Tre Vigne”, produced by Vietti, is obtained with grapes that comes from vineyards of 25-30 years old. After a period in steel, it is poured in big barrels made of durmast, where it matures for 10 months, then it is bottled without filtration. Eclectic in food pairings, it is a perfect wine for a dinner with friends.

It shows a ruby red colour full of purple reflections. The scent is fruity, with hints of blackberry, raspberry and blueberry. Its taste has medium structure, with soft tannins and a good freshness. Great balance and interesting persistence.

It can be suggested with pizza, grilled vegetables or light main dishes. You have to try it with “risotto” with meat, but it is suitable with all the dishes of the Mediterranean kitchen. It has to be served at 18°C in a high, wide wine glass.
