Vinification of 100% pure Chardonnay for this sensational wine of Elena Walch line selections. The territory on which the vineyards stand is hilly and facing south-east on calcareous soils. A synergy of grapes from medium-height soils up to 600m a.s.l. located in the southern part of South Tyrol. Harvest done entirely by hand. The vinification provides that the grapes are pressed gently and the must undergoes static clarification. It is then fermented in steel tanks at a controlled temperature of 20ºC. The wine then ages for a few months on its lees in stainless steel containers.
Characteristics of this Chardonnay "Cardellino"
The aspect is straw yellow bright and bright to the eye. The aroma on the nose offers a fruity bouquet and distinguished in particular by exotic and tropical notes of ripe banana, then enriched by delicate floral nuances. The taste to the sip is elegant, well balanced in the acidic shoulder and excellent persistence.
