The fermentation provides for a first phase in which the alcoholic fermentation starts and immediately after the malolactic one that develop in steel, with a second fermentation in the bottle with disgorgement according to the Champenois Method. The aging of the wine for this label is at least 72 months on the lees, before being put on the market.
