The prince of the Tuscan wines . The DOCG denomination Brunello di Montalcino guarantees the Denomination of Controlled and Guaranteed Origin. The vinification requires to regulate only and exclusively the use of 100% pure Sangiovese grapes. The territory of origin is naturally that of Montalcino, in the Montluc area where there are 9 hectares of company land. The altitude of the land is about 450 meters above sea level. The exposure is towards South / South - West. The soil is rich in calcium and clays. The training system used is that of the spurred cordon. The density of the vines is around 4500 units per hectare and the yield reaches 34 hectoliters per hectare of vineyard land.Starting from the harvest where manual harvesting in small 17 kg boxes is carried out during the first week of October. We proceed with the vinification and soft pressing of the grapes preceded by careful selection of the grapes. Fermentation takes place in concrete tanks and is followed by malolactic fermentation which takes place in 500 liter tonneaux. The final refinement is 24 months in French oak tonneaux, some new and some second passage, medium toasted. Long bottle aging before being put on the market.

Looking at this Brunello di Montalcino DOCG from San Polo it is intense ruby red with garnet reflections, clear and brilliant.The bouquet is expressed with the typical aromas of violets and small red fruits. There are hints of undergrowth, aromatic wood, light vanilla and composite jam followed by subtle notes of intense, persistent, ample and ethereal coffee. The taste is warm in the mouth, with a dense and full-bodied texture. The finish is long, with well-defined tannins. Brunello di San Polo, thanks to the characteristics of the soils from which it comes, withstands long aging and improves with refinement in the bottle.

The elegance and harmonious body of this Red wine , allow combinations with very structured dishes such as red meats, feathered and furred game, possibly accompanied by mushrooms and truffles.Excellent with cheeses such as aged toma, Parmigiano Reggiano and Tuscan pecorino. It is advisable to serve it in large-shaped glasses, to be able to grasp its composite and harmonious bouquet. Uncork a couple of hours beforehand to allow adequate decantation. It should be served at 20°.
