The Cremant de Bourgogne Rosé Grande Cuvée from Maison Veuve Ambal comes from a blend of Pinot Noir, Gamay and Chardonnay grapes that are harvested manually and then individually subjected to the soft pressing and fermentation phase. After a few months of refinement, only the best vins clairs are chosen which will then give life to the definitive cuvée. According to the Classic Method or Champenoise, a second fermentation on the yeasts takes place for about 15 months, before passing to the degorgement.
Characteristics of this Cremant de Bourgogne
The organoleptic test shows an intense pink color and a persistent perlage. The olfactory notes revolve around red fruits such as strawberry, raspberry, currant but also bread crust and rose. On the palate the drink is balanced, fruity and with a slightly savory finish.
Suggested food pairings while tasting this Cremant de Bourgogne
Particularly suitable as a combination with fish-based dishes such as tartare, hot appetizers, sushi and sashimi. Serve at a temperature of 6-8°C in the characteristic balloon flute glass, ideal for champagne and classic method sparkling wines as it amplifies the aromas of the product while maintaining its perlage.
